This is one of those salads that works anytime you want something simple and fresh.
Mediterranean chickpea salad is light but still filling, thanks to the chickpeas. It’s full of flavor, easy to prepare, and doesn’t require much effort.
I like it especially in warmer weather, when you want something wholesome but not hot. It’s fresh, balanced, and perfect for a quick lunch or light dinner.
How to choose the best ingredients
Chickpeas: I like to cook chickpeas myself—it gives better flavor and no preservatives. But when I’m short on time, canned chickpeas work perfectly too. Just rinse them well before using
Tomatoes: Cherry or baby plum tomatoes are the best choice—they hold their shape and look great in the salad. If using larger tomatoes, chop them finely
Cucumber: Choose a thin-skinned salad cucumber. There’s no need to peel it—just wash it well. The skin adds freshness and keeps the texture better
Parsley: Fresh flat-leaf parsley works best—it adds a slightly sharp, fresh flavor and balances the salad. I don’t recommend curly parsley here—it’s better for decoration
Onion: Red onion is ideal—milder and slightly sweet, perfect for salads
Black olives: Use pitted olives and cut them in halves—it makes the salad easier to eat
Feta: Choose good-quality feta or Greek-style cheese—it adds saltiness and creaminess that brings everything together

Top Tip for Success
- If you cook chickpeas from scratch, soak them overnight and cook until soft

- Always rinse canned chickpeas well before using—it improves both taste and texture
- If you want a lighter salad, you can remove the chickpea skins—it takes a bit of time, but it makes the texture smoother
- Let the salad rest for 10–15 minutes before serving—the flavors combine much better
- Add feta just before serving, so it keeps its texture
- Adjust lemon juice and olive oil at the end—it makes a big difference in freshness

Mediterranean chickpea salad
Ingredients
Method
- Wash all vegetables thoroughly. Cut the tomatoes into quarters, cut the cucumber lengthwise, and do not try to peel the quarters. Then the cucumber will keep its firmness longer.
- Wash the parsley well and remove only the youngest sprigs. We chop very finely.
- Peel the onions, cut them in half, and cut them into feathers.
- Drain the olives from the excess brine and cut lengthwise in half.
- Fete crumble or cut into cubes, and it's up to you.
- We put everything into a bowl.
- To prepare the dressing.
- Pour the olive oil, a teaspoon of vinegar, and the juice of half a lemon into the jar.
- Peel the garlic and squeeze through the press or finely chop (if we use a press, we can also finely chop the remains that were left in the press and put it in the dressing)
- Close the jar and shake vigorously so that the ingredients are well combined.
- Season the salad with salt and pepper to taste.
