It’s also a very nutritious dish. Chicken liver is a great source of easily absorbed iron and vitamin B12, which support blood health and help prevent deficiencies.
It’s simple, quick to prepare, and something I come back to from time to time.
How to choose the best ingredients for the fried liver
Chicken liver: Choose livers that are deep red and fresh-looking. Avoid pale or pinkish ones—they tend to have more fat and less flavor. Poultry liver is the easiest to prepare and cooks quickly
Milk: Soaking the liver in milk helps make it more tender and softens the flavor. Use regular cow’s milk for best results
Onion: Brown or white onions work well. Cook them slowly until caramelized—they add sweetness and balance the richness of the liver
Frying oil: Use a neutral oil like rapeseed or sunflower. It handles heat well and doesn’t overpower the flavor

- Peel the liver from the leaves, soak the peeled liver in milk for about 30 minutestake it out of the milk and dry it thoroughly with a paper towel
- As the liver is soaked, peel and dice the onions.Then fry the onions in oil, simmer to soften.When we fry the onions, we lay out the plate.
- Fry our liver in the same fat, if necessary, add oil. Remember to clap the liver on hot oil. Fry for about 3-4 minutes, uncovered on each side.
- When the liver is fried (I usually take one out on the plate and cut it in half to check), take the onion on the plate, mix, salt and pepper to taste.
- Serve with a salad of pickled cucumbers and tomatoes.If you have the opportunity, I recommend pickled cucumbers with this salad, they are much healthier and taste even better in this comparison.
