Chicken Sun-Dried Tomato and Green Olive Salad is a fresh and satisfying dish—perfect for lunch, meal prep, or a quick option when you need something ready.

This is one of those salads I make when I want something simple but still filling. It works well for lunch, when guests come over, or when I need to prepare something ahead for the next day.
It has everything I look for in a meal—protein, fresh greens, and bold flavors. Arugula adds a bit of sharpness, chicken makes it more filling, and sun-dried tomatoes with green olives give it a deeper, slightly salty taste.
It’s easy to prepare, holds well in the fridge, and doesn’t need much to taste good.
How to choose the best ingredients for a Chicken Sun-Dried Tomato and Green Olive Salad
Chicken breast: Use good-quality chicken. You can also use other boneless cuts or turkey if you prefer
Sun-dried tomatoes in oil: I like using tomatoes in olive oil because the oil itself adds extra flavor to the salad. If you prefer a lighter version, use dry-packed tomatoes and add your own olive oil
Pasta: I like using farfalle—they hold the sauce well and look good in a salad. You can use any pasta you have, even whole grain or colored pasta
Herbs and spices: Use your favorite mix for the chicken. A simple herb blend, Cajun, or gyro seasoning all work well
Pumpkin seeds: Add crunch and texture. You can replace them with sunflower seeds or other seeds you like

Top Tip for Success
If you're going to make this recipe, make sure to follow this top tip!
- Cook the pasta ahead and let it cool completely before mixing—it keeps the salad from getting soft
- Rinse the pasta with cold water after cooking to stop the cooking process and keep it firm
- Use leftover pumpkin seeds—just peel and lightly toast them for better flavor
- You can prepare more seasoned chicken at once and keep it in the fridge for later use
- Add the dressing just before serving if you want the salad to stay fresh longer
- Mix gently so the ingredients keep their shape
- Store in the fridge for up to 2 days—best taste on the same or next day
