Fluffy Apple Pancakes (Soft & Buttery) are light, tender, and full of apple and cinnamon flavor—perfect for a cozy breakfast.

These pancakes are one of those breakfasts that everyone enjoys.
Soft, fluffy, and slightly buttery, with pieces of apple and a hint of cinnamon—they’re simple, but full of that warm, homemade feeling. The kind of smell that fills the kitchen and brings everyone in.
For me, it’s a taste of childhood. And now it’s something I like to make again, knowing it can become just as familiar at our table.
How to choose the best ingredients for Apple Fluffy Buttery Pancakes
Apples: Choose the apples you like. Since cooking time is short, they keep their shape and texture
Buttermilk: You can replace it with yogurt or kefir. Room temperature is helpful, but not essential
Ghee: Not required, but if you want a deeper buttery flavor, it’s a great option
All-purpose flour: Regular all-purpose flour (plain flour in the UK) works best. You can sift it for a lighter texture
Cinnamon: Adds warmth and pairs perfectly with apples—adjust to your taste
Powdered sugar: Great for finishing—lightly dust on top just before serving

Top Tip for Success
- You can add cinnamon directly to the batter—it blends beautifully with the apples. Just keep in mind the pancakes will turn slightly darker
- For extra fluffiness, separate the eggs: beat yolks until light and fluffy, and whip the whites with a pinch of salt and sugar, then gently fold them in
- Fry on low to medium heat so the pancakes cook through without getting too dark
- Don’t flip too early—wait until bubbles form on the surface and the edges look set
- Use a non-stick pan or a bit of butter/ghee for the best flavor and texture
- If the batter gets too thick, add a splash of milk or buttermilk
- Keep cooked pancakes on a rack or loosely covered so they stay soft and don’t steam too much
- Serve warm—the texture and flavor are best right after cooking
