Where did I draw inspiration for this dish?

While traveling in Italy, I enjoyed a traditional Italian dinner where dishes came out rapidly from 6 p.m. to midnight.
All the food was delicious, but the grilled zucchini particularly stood out due to its simple preparation, which resulted in fantastic flavor.
In my version, I enhance the dish with a blend of herbs to add even more flavor, making it the perfect accompaniment to rustic bread.

How to choose the best ingredients for Grilled Zucchini

Zucchini: the best zucchinis for grilling are young ones with no seed nests and thin skin. You can slice them into circles or long strips.

Olive oil: of course, we can use only extra virgin olive oil from Italy

Vinegar balsamic: Make sure to use authentic balsamic vinegar from Modena for this recipe. Check the label to ensure it doesn’t contain caramel, preservatives, or water. Look for the IGP mark to guarantee its quality. It’s best to use balsamic vinegar that has been aged for at least one year for this dish.
