1 sweet potato 1 tsp thyme 1 tsp rosemary 1/2 tsp coriander 2 tbsp olive oil Avocado dip: 1 ripe avocado 1 clove garlic 2 tsp lime juice or lemon juice salt for taste
Peel the sweet potato and cut it into thicker strips as for French fries.
Put on a baking tray lined with baking paper.
Sprinkle with herbs and sprinkle with olive oil.
Put into a preheated oven 180 degrees C / 360 degrees F / Gas mark 4, roast for 15 minutes.
Highlight the oven to 200 degrees C / 390 degrees F / Gas mark 6 and roast for another 5 minutes.
