Roast Sweet Potatoes with Avocado Dip is a healthy version of French fries with an even healthier avocado dip. Perfect for a snack, perfect for warm or cold. And above all, an excellent proposition also for children.

Ingredients

  • 1 sweet potato
  • 1 tsp thyme
  • 1 tsp rosemary
  • 1/2 tsp coriander
  • 2 tbsp olive oil

Avocado dip:

  • 1 ripe avocado
  • 1 clove garlic
  • 2 tsp lime juice or lemon juice
  • salt for taste

Instructions

  • Peel the sweet potato and cut it into thicker strips as for French fries.
  • Put on a baking tray lined with baking paper.
  • Sprinkle with herbs and sprinkle with olive oil.
  • Put into a preheated oven 180 degrees C / 360 degrees F / Gas mark 4, roast for 15 minutes.
  • Highlight the oven to 200 degrees C / 390 degrees F / Gas mark 6 and roast for another 5 minutes.
