Healthy Broccoli Cauliflower Salad

Healthy Cauliflower Broccoli Salad is a spring salad for me, where I get chives and radishes from my garden, where you can buy ingredients in local markets from local farmers. It is filling in itself and does not need any extras. It is perfect for lunch, even when mixing it with the dressing.

How to choose the best ingredients for Healthy Broccoli Cauliflower Salad

Broccoli: the broccoli should be fresh and green. As you can see from the yellow blooming flowers on the surface of the broccoli, it will not be suitable. These flowers indicate that the broccoli is old and blooming. When broccoli still has leaves, it is easy to determine whether the vegetable is fresh. The leaves are simply firm with no signs of deception.

Cauliflower: the cauliflower must be white, fresh, and firm, without brown discoloration. 

Eggs: eggs will be perfect for this free-range because they taste different, in my opinion. And here, the taste of eggs is clearly visible in the salad.

Tips and Tricks Healthy Broccoli Cauliflower Salad

  • For the broccoli to have a beautiful green color, it is worth introducing the same amount of sugar as salt into the boiling water. Or you can add the same amount of vinegar instead of sugar.
  • I cook the broccoli and cauliflower in the same water, only one by one, boil the cauliflower first, take it out with a colander, then cook the broccoli and take it out with a colander.

Healthy Broccoli Cauliflower Salad is a quick and filling salad perfect for lunch or a light dinner.

Ingredients

  • 7 oz broccoli
  • 7 oz cauliflower
  • 2 eggs
  • 12 radishes
  • 1/3 cup chives/spring onion

Dressing:

  • 1/2 cup natural yogurt
  • 2 cloves garlic
  • salt and pepper to taste
  • 1 tbsp mayonnaise (optional)

Instructions

  • Boil the broccoli and cauliflower in salted water until al dente. Broccoli will cook more than cauliflower, so you can't cook them together.
  • The broccoli is cooked for about 3 minutes and the cauliflower for about 4.30 minutes.
  • When the vegetables are cooked, they need to cool down.
  • In the meantime, boil hard-boiled eggs and cool them equally.
  • As soon as the broccoli is ready, we cut it into pieces and put it in a salad bowl, and we do the same with cauliflower.
  • Cut the eggs into quarters, put them on the croquettes and cauliflower, cut the radishes into quarters, and sprinkle them with our salad.
  • Cut the chives finely and sprinkle them equally on the salad.
  • Prepare the dressing in a large mug.
  • Mix the yogurt, mayonnaise, peeled and pressed garlic together, and add salt and pepper to taste.
  • Pour the salad with the prepared dressing.
