These truffles are one of my favorite ways to use leftover cake.
They’re deeply chocolatey, soft inside, and finished with a delicate hint of Baileys that pairs perfectly with coffee. It’s a simple idea, but it feels a bit special every time.
I really like recipes like this—nothing goes to waste, and something new comes out of it. Instead of throwing cake away, you turn it into something even better. At home, leftover cake usually means one thing—truffles are coming soon.

Leftover cake: Use any cake you have—failed bakes, dry sponge, muffins, or even brioche. This is a perfect no-waste recipe, so almost anything works
Dark chocolate: Choose chocolate with at least 55% cocoa. If your base is very sweet, you can go for a higher percentage to balance the flavor
Whipping cream: Use fresh, good-quality cream. It helps create a smooth, rich texture
Baileys: Classic Baileys works great, but you can use any cream liqueur you like—different flavors also work really well here

Top Tip for Success
- If a cake doesn’t turn out—collapsed, too dry, or muffins with filling leaking out—don’t throw it away. Freeze it and use later for truffles
- This recipe works best with cake that’s no longer fresh—it blends better and absorbs flavors nicely
- Crumble the cake very finely—this helps create a smooth, even texture
- Add Baileys gradually—you want the mixture soft but not too wet
- If the mixture is too sticky, chill it in the fridge before shaping
- Roll truffles with slightly damp hands—it makes shaping easier
- Coat them right after shaping so the coating sticks better
- You can store truffles in the fridge for a few days—they get even better as flavors develop
- For a firmer texture, keep them chilled; for a softer bite, leave them at room temperature for a few minutes before serving

Method
- Crumble the dough into small pieces and throw it into a large bowl.
- Pour the whippy cream into a saucepan and heat it up. Add the crushed chocolate and mix everything thoroughly until combined.
- When the chocolate is loosened and combined with the cream, pour it into the crumbled dough.
- We mix thoroughly with a mixer to connect.
- All the ingredients combine to make a smooth mass. Add the bales and mix thoroughly again.
- If the dough is too thin and you cannot form balls, put them in the refrigerator for a moment for about 30 minutes, and it should be good.
- We form balls with a diameter of about 3-4 cm. Roll each ball in cocoa.
- We pour about 3-4 tablespoons of cocoa onto a large flat plate and spread the cocoa evenly on its surface. And on the prepared plate, we coat our truffles. Then, we can put them in mini muffin cups.
